Egg Salad with Fresh Dill


  • 10 hard-boiled eggs, peeled
  • ¼ cup shallots, minced
  • ¼ cup celery, finely chopped
  • ½ cup red bell peppers, finely chopped
  • 1/3 cup fresh dill, chopped
  • 1/3 cup mayonnaise, use more if you like
  • Salt and pepper to taste
  • A couple teaspoons of sriracha hot sauce if you like it spicy


  1. Using a box grater, grate the eggs into a large mixing bowl. Add the other ingredients and stir to combine. Season to taste with lots of salt and pepper.
